Brown Basmati Rice Vegetable Casserole

Ingredients

  • 1 Small Eggplant
  • 2 Medium Zuchinni
  • 2 Carrots
  • 1 Red Pepper
  • 1 Onion
  • 2 Plum Tomatoes
  • 1 Cup Brown Basmati Rice
    Dressing
  • 2 Cups Water
  • 1/3 Cup Olive Oil
  • 3 TSP Salt
  • 1/4 TSP Ground Black Peppr
  • 4 TBSP Red Wine Vinegar
    Garnish
  • Toasted Sunflower Seeds

Instructions

  • Oil a deep casserole dish
  • Dice all the vegetables finely- the smaller the better.
  • Mix the dressing with the vegetables
  • Pour the Rice and Water first into the oiled casserole dish.
  • Pour the vegetables with the dressing on top.
  • Place a piece of parchment paper on top (don't let the edges out of the dish.
  • Place a layer of foil on top and then the casserole lid.
  • Bake for 2 hours in a 325 oven.
  • Before serving generously sprinkle toasted sunflower seeds.
