Butternut Squash with
Tamari Tahini Dressing

The tahini sauce complements the butternut squash beautifully. For a great vegetarian option, serve over or stuff with any grain, quinoa, buckwheat, etc,.. Scatter some roasted pumpkin seeds for a great meal.

Butternut Squash with Tamari Tahini Dressing

Pick a squash that is heavy for its weight. If it feels very light, it may be dried out and stringy inside. You will know when you cut it open. If the squash is stringy and mushy, don't bother cooking it. The inside should be dense and a deep orange color.


  • 1 Medium Sized Butternut Squash - peeled and cubed into medium sized portions
  • Oil Spray or just oil a baking dish very lightly - any kind cooking oil.
  • A glass baking dish is nice so you can see that the level of the water doesnt evaporate completely.
  • 3 TBSP Unprocessed Tahini
  • 2 TBSP Water
  • 1 TBSP Tamari Soy Sauce


  • Place the butternut squash pieces in an oiled baking dish
  • Add about a cup of water.
  • Seal the baking pan tightly with a piece of parchment paper and aluminum foil, crimping the edge of the foil.
  • Bake for about 45 minutes - till the squash is pierced easily with a fork.
  • Combine sauce ingredients in a small bowl.
  • Mix, and correct seasoning to taste
