Carrot Orange Salad

Refreshing appetiser for summer, or any time you have a bunch of carrots to use up. I always serve this in a cup so the carrots can stay moist and fresh tasting.

Carrot Orange Salad

Total Time: 15 minutes

Serving Size: 6 - 8 as a side dish

Refreshing on a summer day. Will last a day or two, no more.


  • 6 medium Carrots peeled
  • 1 - 2 Cups Fresh Squeezed Orange Juice/ or good quality pasturized orange juice - with pulp.
  • 1/4 Fresh Lemon
  • Orange Segments from 2 Oranges - or even canned, drained and rinsed.
  • Some of the Orange and Lemon Zest (optional)


  • Grate the peeled carrots in a food processor to a shredded consistency.
  • Steep in the orange juice.
  • Squeeze the fresh lemon into the carrots.
  • Scatter the orange segments.
  • Garnish with the orange and lemon zest.
