Creamy Prune Apricot Compote

When plums are in season, cook up a pot of plums, top with Greek Yogurt and some granola. This can serve as a creamy snack or a light breakfast.

Creamy Prune Apricot Compote

Ingredients

  • 2 Cups Pitted Prunes
  • 1/2 Cup Dried Apricots
  • 1 Cinnamon Stick
  • 4 Allspice (look like peppercorns)
  • 1/4 TSP Ground Ginger
  • 1/4 TSP Ground Cardemon
  • 1/4 TSP Ground Cloves
  • 1/4 Cup Date Syrup ( or any sweetener of choice)

Instructions

  • In a saucepan add 3 cups of water and all of the ingredients.
  • Bring to a gentle boil, then simmer with lid on tight.
  • Check now and then, you may need to add water so that the water level remains a little below the top of the fruit contents of the saucepan.
  • Simmer for about 45 minutes. Keep simmering till the prunes and apricots just start to fall apart some.
  • Serve with a dollop of Greek Yogurt and sprinkle some nutmeg
