Marinated Mushrooms

Serve this as an option when serving a bunch of small bowls of salads as an appetiser, as is often done in the Middle East.

Marinated Mushrooms

A great side with fish, meat, or chicken


  • 1 Pint Mushrooms
    Marinade Ingredients
  • 1 TBSPGrapeseed Oil - any light oil
  • 3 TBSP Fresh Lemon Juice
  • 1/4 TSP Salt
  • A Pinch of Black Pepper
  • 4 Stalks Scallion sliced thin
  • A Small bunch of freshly chopped Parsley


  • Clean the mushrooms with a paper towel and or a brush
  • Cut off the stems (can use for soups)
  • Slice the mushrooms into thin slices.
  • Add the marinade ingredients oil, lemon juice, salt and pepper) to the mushrooms and gently lift with 2 spoons and incorporate the marinade.
  • Add the scallion and parsley and combine gently.
  • Place in a bowl, seal and refrigerate for a while - for the flavors to blend.
