Norwegian Lemon Cod Fish

Unless you have access to the freshest Cod Fish, purchase Flash Frozen Norwegian Cod.


  • 2 Large fillets (no skin) of Cod Fish defrosted in the refrigerator overnight
  • 2 TBSP good quality olive oil
  • 2 Lemons
  • About 8 Sprigs of Fresh Dill Chopped
  • Salt and Pepper


  • Preheat oven to 350 degrees
  • Spread the olive oil on the bottom of a baking pan
  • Place Fillets in the pan.
  • Cut a lemon in half and generously squeeze lemon over both fillets- You may need the whole lemon
  • Sprinkle the rest of the Olive oil over the fish
  • Grind some Salt and Pepper on top
  • Slice the second lemon into thin slices and place all over the fish
  • Bake till fish turns opaque ( a milky white - rather than translucent). This may take 15 to 20 minutes. However check, now and again.
  • Take a fork and by the thickest part of the fillet separate a tiny amount and check to see if it is done.
  • You can raise the temperature of the oven for the last 3 minutes to 450 degrees.
