Oven Roasted Eggplant Spread

Always buy eggplants that are light for their weight to ensure ripeness. Otherwise you get a seedy, bitter eggplant.


  • 2 Eggplants
  • 2 TBSP Good Quality Mayonnaise
  • Freshly Ground Black Pepper and Salt to taste


  • Preheat the oven to 350 degrees
  • Wash and place the whole eggplants in a pan.
  • Slash both with a knife along the top in a vertical fashion.
  • Place in the oven uncovered.
  • Roast till the top is charred and burnt, but the inside is bubbly and soft.
  • Let cool completely.
  • Scoop out the inside with an ice cream scooper or spoon.
  • Mash the eggplant and add the mayonaise
  • Add the freshly ground black pepper and salt
