Potato Salad

Most people have a favorite potato salad. This one, which my mother prepared is my favorite.

Potato Salad

Ingredients

  • 5 medium, waxy Potatoes like, Red, Golden Yukon, or Baby New Potatoes that hold their shape.
  • 1 Carrot grated or sliced thinly
  • 2 Green Onions minced
  • 5 Sprigs each of parsley and dill chopped
  • 1 large stalk celery minced
  • 3 Gherkin Pickles minced
  • 1/2 TSP Celery Seed
  • 1/2 Cup Mayonaise
  • Salt and Freshly Ground Pepper to taste

Instructions

  • Boil the potatos till a knife goes through - but not overcooked - You want the potatos to hold their shape.
  • Let potatos cool.
  • Gently with two large serving spoons add the mayo gently, lifting and combining the mayo with the potatos.
  • Proceed to add the rest of the ingredients, gently- just lift and combine.
  • Keep refrigerated. Will keep 2 days.
