Raw Apple Beet Salad

  • 1 Large Beet cut into julliene pieces
  • ( If pressed for time shred the beet, and carrot and apples in a food processor but not on the fine setting).
  • 2 Apples and a half of a Lemon. Good to mix varieties here. 1 Granny Smith and the other anything you like as long as it is a very crunchy apple. Squeeze some lemon juice on the cutting board to keep apples from oxidizing. When done, give a generous squeeze of lemon on all the cut surfaces of the apples.
  • 1Carrot - also cut into jullienne strips
  • 4 TBSPSApple Cider Vinegar
  • 2 TBSPS Water
  • 1 TBSPS Honey
  • 1 TSP Olive Oil
  • Pecans or Toasted Sunflower Seeds


  • Combine dressing ingredients and mix well.
  • Combine the cut beets, carrot, and apples.
  • Gently toss with dressing.
  • Garnish.
