Spiced Sweet Potato and Black Bean Salad

You can adjust for spiciness or sweetness. Add spices when dish is still hot.

Spiced Sweet Potato and Black Beans

Ingredients

  • 2 Large Sweet Potatos cubed
  • 2 TSP Olive Oil
  • 1 Can of Black Beans - drained - you will add a TSP of cumin and salt to these alone
  • 1 TSP Cinnamon
  • 1 TSP Cumin
  • 1/4 TSP Curry Powder
  • 1/4 TSP Salt
  • 1 TSP Maple Syrup
  • 1 TBSP Cilantro Chopped

Instructions

  • Preheat oven to 350 degrees.
  • Line an oiled baking tray with the Sweet Potato cubes.
  • Sprinkle the Olive Oil on the Sweet Potatos and gently combine.
  • Add the Spices to the Sweet Potatos.
  • Bake till completely soft on the inside and firm/ springy/cruncy on the outside. Check after 20 minutes in your oven and keep checking every 5 minutes after. You don't want hardened, burned sweet potatos.
  • Place the can of Black Beans in a bowl and add the cumin and salt.
  • When the Sweet Potatos are done. Wait for them to cool for at least 10 to 15 minutes.
  • Add them to the Black Beans.
  • Combine most of the Cilantro gently into the mixture.
  • Place in a bowl and garnish with more cilantro.
