Watermelon Ice

You bought this promising looking watermelon. You tapped it and it gave you that hollow ping to indicate ripeness. But low and behold – it was bright red and tasteless. Make this refreshing dessert- and no one will ever know!

Watermelon Ice


  • Watermelon - a half medium sized watermelon
  • 2 TBSP Fresh Lemon Juice
  • 1/2 Cup of Honey
  • Stevia


  • Cube watermelon- and blend - in batches- don't overfill your blender!
  • The last batch add the lemon juice and honey to the remaining watermelon
  • In a DEEP large (preferably rectangular plastic container, pour and whisk the mixture to blend well.
  • Taste. If not sweet enough fill a dropper with liquid stevia - blend and taste till it's just right.
  • Place in freezer for 2 hours.
  • Remove container and with a fork or dough cutter mash the gradually freezing mixture every hour or so till the whole mixture resembles pretty ice crystals.
