Whole Grain Garlicky Breaded Chicken

Ingredients

  • 10 Chicken Legs - skin removed
  • 3 Cups Whole Grain, BreadCrumbs - Spelt works well too.
  • 2 TBSP Olive Oil
  • 3 Cloves Crushed Garlic
  • 4 TBSP Garlic Powder - yes 4!
  • 2 TBSP Onion Powder
  • 1/2 TBSP Ground Black Pepper
  • 1 TSP Salt

Instructions

  • Preheat oven to 350 degrees.
  • Pat dry the skinned chicken drumsticks.
  • Combine the oil with the fresh garlic ( the garlic powder is for the breading, so don't add it here) and rub the oil mixture into the chicken
  • In a wide mouthed bowl combine the bread crumbs, garlic powder, onion powder, black pepper and salt.
  • Place one chicken leg at a time in the bowl and roll around about 5 times, even squeezing the bread crumbs to adhere better to the chicken.
  • Place in an oiled baking dish in one layer
  • Cover with tin foil and bake for about 45 minutes.
  • Then remove cover and brown for about 5 to ten minutes, checking to make sure that the chicken browns some, and does not burn.
  • Remove and cut into the center of the biggest chicken leg and check for doneness - You do not want red streaks indicating raw chicken by the bone.
