Zucchini and Carrot Pasta with Peanut Sauce

Yield: 4 Servings


  • 3 Large Firm Zucchini scrubbed clean
  • 1 Large Carrot Peeled
  • 1/2 Cup toasted coarsely chopped Peanuts
  • 1⁄4 cup Honey
  • 1⁄4 cup creamy unsweetened peanut butter
  • 1⁄4 cup Tamari Soy Sauce
  • 3 tablespoons Rice Vinegar
  • 1 TSP Hot Sauce, or Chilli Sauce
  • 3 Garlic Cloves crushed
  • 1 Small chunk of Ginger crushed. In a pinch you can use 1/2 TSP dried Ginger
  • If you like it hot add a small quantity of Cayenne. Add small amounts at a time and taste as you go.


  • You will need a Julliene Peeler to shave the zucchini and create long pasta like strands.
  • Use large zucchini and shave the long strands till you get to the seeded part of the zuchinni.
  • I save the inner part for omlets or a small ratatouille side dish.
  • Same with the carrots.Only shave long strands of carrot till you reach the inner portion of the carrot.
  • You can prepare this a day ahead as follows.
  • Line a containter with a towel. Place the zucchini strand and then the carrot strands.
  • Cover with the towel. This will keep the vegetables dry.
  • Combine all the ingredients for the sauce.
  • Add right before serving and Garnish with the peanuts.
