
Apple Spice Muffins
Moist and full of apple flavor.
Ingredients
- 1/2 Cup Chopped Pecans (or walnuts)
- 2 TBSP Maple Syrup
- 1 TSP Cinnamon
Topping:
- 2 Cups Demerara Sugar (or 1 Cup Sugar and 1 Cup Coconut Sugar)
- 3 Cups Whole Wheat Flour
- 1 Cup White Flour
- 2 TSP Baking Soda
- 1 TSP Salt
- 1/2 Cup Grapeseed Oil
- 4 Eggs
- 2 Cups Unsweetened Apple Sauce
- 1 1/4 Cup Coconut Milk (may say coconut cream on the can)
- 1/4 Cup Water
- 3 Large Apples Diced (wash the apple well and leave the skin on) - Granny Smith, Cortland, Rome... All Kinds that are good for baking- not ones like Delicious
- 1 TBSP Ground Cinnamon
- 1/4 TSP Ground Cardamom
- 1/4 TSP Ground Cloves
- 1/4 TSP Ground Ginger
- 1/8 TSP Ground Nutmeg
- Oil Spray
- Sturdy deep muffin cups
Instructions
- Preheat oven to 350 degrees
- Prepare two large bowls, one small bowl and one medium bowl
- In the small bowl combine the pecans, maple syrup and 1 Tsp cinnamon - set aside (This will be the topping before putting muffins in the oven.
- In a large bowl combine the dry ingredients: flour, baking soda and salt.
- In another large bowl combine: eggs, apple sauce
- In the medium bowl: combine the coconut milk with the water
- Now, alternate combining and whisking gently by adding to the flour bowl -the egg apple sauce mixture with the coconut milk mixture. Mix till just mixed. Do not overmix.
- Prepare about 24 sturdy deep muffin cups. Spray with oil.
- In a deep muffin tin or sturdy deep muffin cups, pour about 3 Tablespoons of the muffin batter
- in each cup.
- Top each muffin with the pecan/cinnamon mixture.
- Place all the muffin cups on a tray and place in the preheated oven.
- Bake for 30 to about 35 minutes depending on your oven.
- Important: Make sure the tops are nicely browned and a toothpick comes out clean. Since these are large muffins, take one out to test. Turn it over on a bowl to make sure it is fully bake
