
Baby Bok Choy Salad
This is a very fresh tasting salad. A great accompaniment to any main dish.
Ingredients
- Two bunches of fresh Baby Bok Choy
- 1 whole Scallion chopped
- 1/4 Cup of Grapeseed Oil (Not Olive oil must have a neutral or nutty tasting oil)
- 1/4 Cup Toasted Sesame Oil
- 1/3 Cup of Maple Syrup
- 1/2 Cup of Water
- 2 - 3 Cloves minced Garlic
- Small Chunk of Ginger - about the size of a quarter - chopped well
- 1/3 Cup Halved Toasted Walnuts or Black Sesame Seeds to garnish
Garnish
Instructions
- Wash, soak and check the bok choy for bugs or insects.
- Slice into strips.
- Dry in a salad spinner if you have one.
- Keep wrapped in a towel in a closed container till serving
- Combine the dressing ingredients and keep in a small jar or glass container.
- Keep the dressing separate till you are ready to serve. This will keep the bok choy bright and springy, and not soggy.
- Garnish with walnuts or black sesame seeds right before serving
