
Black Cured Olive Spread
A great accompaniment to any Mediterranean Inspired meal, such as a salad with Feta Cheese or a Minestrone Soup and some Whole Grain Sourdough bread or Crackers.

Ingredients
- Small container/ jar of cured olives soaked briefly and rinsed.
- 1/2 Cup of black olive rings
- Olive Oil
- 2 cloves fresh pressed garlic
- [Optional]
- 1 TbSP Pine Nuts
Instructions
- Pit the black cured olives.
- Place both the olive rings and cured olives in the food processor.
- Add the pressed garlic and pine nuts
- Start the food processor and add a small amount (start with a quarter of a cup)
- of olive oil.
- Process. Scrape the sides of the food processor.
- Check and see if you have a paste like consistency. If not add 2 tablespoons of
- olive oil and process some more.
- Again, scrape the sides of your food processor and check for a paste like consistency.
