
Chilled Apple Apricot Soup
That sack of apples you bought looked like they were a good deal, but alas, the apples were mealy when you took a bite. Well, this recipe will make admirable use of those lackluster apples.
Ingredients
- 1 1/2 Cups Dried Apricots - Any kind, I used unsulfured.
- 8 Medium Apples peeled cored and sliced.
- 1 - 2 TBSP Fresh Squeezed Lemon Juice
- 1 1/2 Quarts of water
- 1/2 Cup of White or even Red Dry Wine
- 1/2 TSP Ground Cardemon
- 1/4 TSP Ground Ginger
- 1/2 TSP Ground Nutmeg
Instructions
- Peel and core the apples and sprinkle the lemon juice on the apples.
- In A pot add the apricots, apples and water.
- Gently bring to a boil.
- Simmer till the apples and apricots are soft and mushy.
- Add the spices and wine.
- Let cool some.
- Mix right in the pot with an immersion blender.
- Leave it a bit chunky if you like, or blend till totally smooth.
- Let cool.
- Refrigerate, and serve chilled. Garnish with mint or kiwi some flaked coconut - anything you like.
- This will keep for about 3 days.
