
Cilantro Pesto
An equally fragrant option to pesto with basil, and a welcome change.
Ingredients
- 2 Cups soaked and washed thoroughly fresh cilantro leaves (without stems)
- 1/4 Cup walnuts - or pine nuts if you want to splurge
- 2 - 3 Cloves Crushed Fresh Garlic
- Start with 1/3 Cup of EVO - Extra Virgin Olive Oil
- Salt and Pepper to taste
Instructions
- Make sure your cilantro is washed especially well otherwise the grit and sand will be very unpleasant and not the smooth result you want. Submerge and soak the cilantro changing the water a few times
- Place all the ingredients into a food process and process till all the ingredients form a paste.
- Add oil or a few more nuts till you get the right consistency.
