
Ginger Garlic Greens Soup
This is the perfect flavorful soup that also has healing, and cleansing properties
Ingredients
- 2 1/2 Quarts Water
- 1 TSP Grapeseed Oil
- 3 Cloves Garlic - sliced thin into matchsticks
- 2 Quarter Sized chunks of Ginger - sliced thin matchsticks
- 1 TBSP Toasted Sesame Oil
- 4 TBSP Tamari
- 1 Medium Carrot - sliced into thin matchsticks
- 3 Green onions diced
- 1 Celery Stalk - cut in small discs or julienne strips (optional)
- 1 Can of Baby Corn - Cut the baby corn into strips
- 2 Bunches Baby Bok Choy - Chop horizontally into strips
- 10 Sugar Snap Peas - Sliced Vertical into strips
- Add the following to the soup bowl before serving:
- Rice Noodles - cooked -can add some toasted sesame oil to keep them moist and separated (optional- but worth it)
Instructions
- In one pot start boiling the water
- In a preheated skillet gently saute the garlic -don't let it burn
- Add the garlic, ginger, tamari to the boiling water and let that simmer for 10 to 15 minutes.
- Add all the vegetables to the boiling broth.
- Turn the heat off.
- When serving- put some noodles into the bowl and then pour some of the soup and
- vegetables over them.
- Taste and correct seasoning, maybe adding more tamari for a stronger flavor or water to tone down the flavors some.
- Serve hot!
