
Greater Than Caesar Dressing
Bring your steamed broccoli up a notch. This dressing is great with all steamed veggies, or raw salads.
Ingredients
- 1 1/2 Cups Mayonnaise ( or vegan mayo - really easy to make your own healthy version)
- 1 TBSP Minced Red Onion (or white)
- 4 - 6 inches green part of a green onion minced
- 1 medium stalk of celery minced finely
- 3 - 5 Capers minced
- 2 - 3 Garlic Cloves - crushed
- 1 medium Gherkin Pickle minced
- 4 Kalamata Olives - minced (this takes the place of anchovies)
- 1 TBSP Dill chopped
- 1/4 TSP Fresh Ground Black Pepper
- Salt to taste
- Thin with some water if needed
Instructions
- In a bowl or salad jar combine all the ingredients.
- Add some water to thin, adding only small amounts a tablespoon at a time to reach the desired consistency. Besides salads and Salmon, goes well with steamed broccoli and cauliflower.
Notes
This dressing is full of flavor, you won't notice the missing anchovies and parmesan cheese common in Caesar Dressings
