
Lemon Garlic Carrot Salad (Moroccon Inspired Carrot Salad)
This salad is tangy and refreshing great accompaniment to any main dish.
Ingredients
- 4 Cups of Shredded Carrots - about 5 large (Feel free to buy already shredded carrots)
- 2 TBSP Extra Virgin Olive Oil (EVO)
- 1 Lemon -Freshly Squeezed Lemon Juice
- 3 Cloves Garlic crushed
- 1 TSP Ground Cumin
- 1/2 TSP Salt
- 1 Pinch of Cayenne (Optional)
- A Handful of Cilantro
- Zest of the Lemon
Instructions
- Place the shredded carrots in a mixing bowl
- In a small bowl combine the olive oil, lemon juice, garlic, cumin, salt and the cayenne - whisk the dressing.
- Pour the dressing on the carrots and with two large spoons make sure the marinade is well distributed.
- Sprinkle the chopped cilantro and lemon zest.
- Taste and correct seasoning.
- Place the salad in a covered bowl to let the flavors blend before serving.
