
Marinated Mushrooms
Serve this as an option when serving a bunch of small bowls of salads as an appetiser, as is often done in the Middle East.
A great side with fish, meat, or chicken
Ingredients
- 1 Pint Mushrooms
- 1 TBSPGrapeseed Oil - any light oil
- 3 TBSP Fresh Lemon Juice
- 1/4 TSP Salt
- A Pinch of Black Pepper
- 4 Stalks Scallion sliced thin
- A Small bunch of freshly chopped Parsley
Marinade Ingredients
Instructions
- Clean the mushrooms with a paper towel and or a brush
- Cut off the stems (can use for soups)
- Slice the mushrooms into thin slices.
- Add the marinade ingredients oil, lemon juice, salt and pepper) to the mushrooms and gently lift with 2 spoons and incorporate the marinade.
- Add the scallion and parsley and combine gently.
- Place in a bowl, seal and refrigerate for a while - for the flavors to blend.
