
Renaissance Inspired Salad
Sweet, sour, satisfying – all kinds of different tastes that truly blend
The many and different flavors make this a very festive salad.
Ingredients
- Any Dark Lettuce Greens or Spinach, a small head of radiccio will give it great color and a hint of bitterness that adds another dimension (optional) - enough for 4 people
- 1/4 of a medium Red Cabbage- thinly sliced or Shredded
- 2 Oranges separated into orange segments
- 1/2 Cup Oil Cured Olives - pit them
- 2 small Gherkin Pickles - minced into a small dice
- 1/4 small Red Onion slivered as thin as possible
- 4 Dried Figs - Mission or other type - Cut open, check and sliver
- 1 TBSP Capers drained
- 1/2 Cup Toasted Slivered Almonds
- Pomegranite Seeds Scattered on top
BEFORE SERVING
- 3 TBSP Oil - Olive or any other you like
- 2 TBSP Red Wine Vinegar, Balsamic is especially nice here.
- 2TBSP Orange Juice
- 1/4 TSP Orange Zest
- Salt and Pepper to Taste
- Taste and correct seasoning to your taste.
DRESSING
Instructions
- Wash and check lettuce greens, and tear into bite size pieces.
- The nicest presentation is on a large platter or individual serving bowls.
- Now scatter all the other ingredients on the platter
- Before serving, top with the almonds and pomegranite seeds.
