
Simple Beets with Cumin and Parsley
The earthy flavors of beets and cumin blend well here. Goes well with most main type dishes.
Ingredients
- 1 Very Large Beet Cubed or Shredded
- About 8 Sprigs of Parsley chopped (or more)
- 1 TSP Ground Cumin
- 1 Quarter of a Lemon
- Fresh Ground Salt and Pepper
Instructions
- Steam the beets till just soft but with a bit of bite - not mushy
- Drain the beets. Add the parsley and combine gently till well blended
- Squeeze the fresh lemon all over and just a grinding of the black pepper and salt.
- Toss gently. This recipe tastes better after a few hours in the refrigerator
